Ganache, the rich chocolate filling inside truffles, means ‘fool’ in French. The story is this… The chocolatier’s apprentice trips and spills scalded cream onto chopped chocolate. The chocolatier scolds, ‘ganache!’ (fool). The chocolate and cream are stirred together. Hence, the creation of the chocolate filling we love today.
